Scholars pastry 狀元糕

I love scholars pastry when I was a kid. It tastes a bit like steam rice cake but it’s not so sticky and but actually a bit chewy. Normally it has quite a lot of sugar mixing inside the sesames but I didn’t add sugar in. You can have it with sesame powder or peanut powder.


The story of this scholars pastry is that once upon a time, there’s a poor student. He went to downtown for an exam, but he failed the exam. He wanted to pass the exam for next year but he couldn’t because he didn’t have money. So he invented a kind of snack that grinding rice into powder then steam it. Selling this snack on the street becomes his way for living whiles studying for the exam. By the time he became number 1. Scholar, he met the emperor and serve this snack to him. Then it becomes a popular snack called scholars pastry.



Here comes the Recipe:


Prep time準備時間: 20 mins

Cook time蒸煮時間: a total of 40 mins


Ingredients 食材

  1. 100g of glutinous rice flour 糯米粉

  2. 25g of rice flour 在來米粉

  3. 70g of water 水

  4. 15g of sesames powder 芝麻粉

  5. 5g of sugar 糖


Instructions步驟


  1. Mix the water with sugar in a bowl. 將水和糖混合在一個碗裡

  2. Combine glutinous rice flour and rice flour together in another bowl then pour the sugar water in. 再把糯米粉和在來米粉混合均勻後倒入糖水

  3. Using hands to mix everything until no liquid. 用手搓粉和水直到沒有液體,都是碎塊狀

  4. Sieve the mixture in a bowl so the it can be like light powder. 用篩子過篩上步驟的粉,直到所有都變成細粉粒

  5. Scoop one spoon of the powder in a silicone container then scoop one spoon of sesame powder then scoop another spoon of powder on the top. 舀出一小湯匙在矽膠模具裡,中間在放入芝麻粉,最上層再放一些粉

  6. Boil a pot of water than steam the pastry for 10-15mins. 水滾後蒸10-15分鐘

  7. Serve it when it’s not too hot. 涼一點後就可以吃了


Note:

When it’s cool down, place in a airtight pastiche bag or a container, steam it for few minutes before eating. 如果沒吃完的話要放到夾鏈袋或是保鮮盒,要吃的時候再隨時蒸1-2分鐘就可以了
