Lotus leaf style Gua Bao 荷葉刈包

I’ve been seeing a lot of posts on Instagram with amazing modeling of steam buns, and I was thinking to make buns look like seashells. At the same time I also wanted to add more veggies in My baby’s meals. So in the end I made steam buns with veggie juice and it turns out looking like lotus leaf.

最近我在IG上面看到好多做得像貝殼形狀的掛包覺得好心動,也想要自己做看看,但我發現寶寶一直不是很喜歡吃青菜,為了讓他營養足夠,靈機一動就把菜汁加在麵粉裡做成掛包,成品意外的像極了荷葉


This type of steam bun that you can easily stuff some meats and veggies in between. Originally, people here in Taiwan like to make plain steam buns stuffing with braised pork, peanuts powder and some corianders. But I make some changes with original version.

掛包可以夾入任何你喜歡的食材,台灣傳統的掛包就是加入滷肉、花生粉和一點香菜,但我今天就不做傳統掛包,而是做了一點小變化


For this recipe, you can make three small buns and each one will be around 30 grams, you can easily increase the proportion to make more buns. 食譜可以做出3個小掛包,每個麵糰大約30克,只要等份量增加所有食材的量就能做出更多掛包



Ingridients食材


  • 100g of all purpose flour 中筋麵粉

  • 50g of veggie juice 菜汁

  • 1/2 teal of dry yeast 酵母粉

  • 1/4 teaspoon of salt 鹽


Instructions步驟


  1. Mix all ingredients together to a dough in one bowl then cover the bowl with plastic wrap or clean towel for 1 hour. 把所有食材加到碗裡,揉成麵糰後蓋上保鮮膜或乾淨毛巾,讓麵糰發酵一個小時

  2. Take out the dough and press out the air inside of it then roll it into a ball. 發酵結束後,將麵糰取出用桿麵棍桿出空氣之後再搓成圓形

  3. Divide dough into three small pieces. 把麵糰分成三等份

  4. Roll out each dough with a rolling pin as a oral shape. 將小麵糰桿平成橢圓狀

  5. Smear a bit of oil on the surface of the dough then fold it in half. 在麵糰表面抹上一層油之後把麵糰折半

  6. Place the finished bun with a piece of parchment paper underneath then put it all in a steamer, let the buns rest for 30mins. 把做好的掛包放在烘培紙上,再放到蒸籠裡,讓掛包二次發酵30分

  7. Take out a pot and boil some water. 拿出一個鍋子準備蒸掛包

  8. When water is boiling, place the steamer in and steam it for 15mins. 水滾後,放上蒸籠蒸15分鐘

  9. When it’s done, don’t take the lead off, let it set for at least 10mins 蒸好後先不要掀開蓋子,讓蒸氣都消了之後再開蓋

  10. You can stuff anything you like with this bun. 掛包可以放任何你想加的食材


Note: Store the buns in a container after it’s cool down, you can store in the freezer for maximum 3 months ; when you wanna have some, just put in a steamer and steam it for 10-15mins

註:掛包冷掉再放到保鮮盒裡保存,放到冷凍最長可以存放3個月,要吃的時候再拿出來蒸10-15分鐘就可以了
