The sweetness from sweet potato adding with egg yolk for creamy kind of texture, it’s perfect for your kids to try it out!

2 eggs 雞蛋
1/4 of sweet potato 地瓜
Pinch of salt (optional)鹽(可加可不加)
Pinch of black peppers (optional)黑胡椒粉(可加可不加)
Instructions步驟
Boil 2 eggs, one of it boils for 6mins, the other one boils for 10 mins 將兩顆雞蛋水煮,一顆煮8分鐘,另一顆煮10分鐘
Steam sweet potato for 10-12 mins until it’s soft and easy to be mashed 把地瓜蒸熟後再壓泥
Cut the eggs into half and mix the egg yolks with mashed sweet potato, salt, and black peppers ( one egg yolk is not fully cooked cuz I’d like to make it taste like mayonnaise kinda texture) 將雞蛋剝殼切半,蛋黃的部分和地瓜泥、鹽、黑胡椒粉拌均勻(蛋黃一顆是半熟做美乃滋和芥末醬的替代口感)
Pour the egg yolk mixture back onto egg white then sprinkle some parsley for decoration 把蛋黃醬裝回蛋白裡再灑上一點洋香菜葉做裝飾
